Hello hello hello! I took yesterday off because of some extreme stiffness/soreness in my right heel (bone spur + Achilles), but got in a nice little hourlong run in the midday heat with any stiffness pretty much working itself out by the end. A quick shower, then my friend Katy came over and we went to work, creating this not-entirely-cooked, mushy warm masterpiece of healthy banana bread:
Sorry for the poor quality of the photo, the lighting in my kitchen leaves much to be desired. That, and we were too impatient to wait – the kitchen smelled heavenly. When we ate it, it was still warm and mushy; that, factored in with the little bits of chocolate, made us think I can’t believe this isn’t deadly bad for us! We used this recipe, slightly modified: we substituted 1/2 cup cinnamon applesauce for 1/2 cup butter, threw in some chocolate chips because we didn’t have walnuts, did 1/2 regular and 1/2 brown sugar instead of a full cup of regular sugar, and only used a 1/2 cup of raisins. We suspect it probably would have cooked better if we had (a) used 3 or 3.5 bananas instead of 4 large ones, (b) used a little more flour, and (c) let it bake longer. Like I said – impatient. 🙂
